Golden Christmas Punch

What You Need:

 

4 maraschino cherries

1 orange, sliced thin

1 lemon, slice thin

1 lime, sliced thin

2 3/4 C of water, divided

1 (12 oz.) can frozen lemonade concentrate, thawed

1 (12 oz.) can frozen limeade concentrate, thawed

1 (12 oz.) can frozen pineapple orange concentrate, thawed

2 liters ginger ale, chilled

 

How to Make It:

 

Place the cherries, orange slices, lemon slices and lime slices into a ring mold.

Pour the water into the mold and freeze until solid.

Pour the remaining water into a punch bowl.

Stir in the lemonade, limeade and pineapple orange concentrates until well blended.

Pour the ginger ale into the punch.

Unmold the fruit ice ring and place fruit side up into the punch.

 

Makes 21 servings

 

This pretty and tasty punch will be a perfect addition to your Christmas buffet table.  Pineapple rings may also be added to the ring mold if you like.

Yuletide Potato Bread

What You Need:

 

2 (1/4 oz.) pkgs. active dry yeast

1/2 C of warm water (115 degrees)

1 (12 oz.) can evaporated milk

2 C mashed potatoes with no butter or milk added

8 bacon strips, cooked and crumbled

1/4 C of butter, room temperature

2 eggs

3 T of sugar

2 T of dried minced onion

1 T caraway seeds

1 t of garlic salt

1 t regular salt

3 C of all purpose flour

 

How to Make It:

 

Place the yeast into a bowl with the warm water and stir until the yeast dissolves.

Add the milk, potatoes, bacon, butter, eggs and sugar and stir to combine.

Stir in the onion, caraway seeds, garlic salt and regular salt and blend well.

Add 3 C of the flour and beat until completely combined and a soft dough forms.

Lightly flour a surface the turn the dough out onto the flour.

Knead the dough for 8 minutes or until smooth and elastic.

Grease a non metallic bowl and place the dough into the bowl turning to coat.

Cover and place in a warm dry place for 1 hour or until the dough has doubled.

Punch the dough down and turn out onto a lightly flour surface.

Divide the dough into two equal sized portions.

Grease two round 2 qt. casserole dishes and place the dough into the dishes. 

Cover and let rise in a warm dry place for 45 minutes or until doubled in size.

Preset the oven to 350 degrees allowing the oven to preheat.

Bake 45 minutes or until the top of the bread is golden brown. 

Cool on wire racks before slicing.

 

Makes 2 loaves

 

Preparation Time:  approximately 20 minutes

Rising Time:  approximately 1 hour 40 minutes

Baking Time:  approximately 45 minutes

Total Time:  approximately 2 hours 45 minutes

 

It’s the potatoes that make this bread tender and moist.  Be sure to place plenty of butter on the buffet as this bread will go fast.

Flavorful Turkey Bites

 What You Need:

 

1/2 C of dry bread crumbs

1/2 C of green pepper, chopped

2 egg whites

4 garlic cloves, minced

8 drops of hot sauce

1 lb. lean ground turkey

1 T of canola oil

1 C of ketchup

1/2 C of water

1/4 C of lemon juice

1/4 C red wine vinegar

2 T molasses

2 T of brown sugar

2 t of dry mustard powder

1 t chili powder

1/2 t cayenne pepper

1/2 t pepper

 

How to Make It:

 

Place the bread crumbs, green pepper, egg whites, garlic and hot sauce into a mixing bowl and whisk until well combined.

Break the turkey into the mixture and mix well.

Shape the mixture into small meatballs.

Pour the canola oil into a skillet and place of medium heat.

When the oil is hot add the meatballs.

Brown the meatballs for 8 minutes, turning frequently, until browned on all sides.

Drain the meatballs well and return to the skillet. 

In a bowl whisk together the ketchup, water, lemon juice, vinegar and molasses.

Sprinkle the brown sugar, mustard and chili powders, and both peppers.

Whisk until well combined.

Pour the sauce in with the meatballs.

Bring the mixture to a boil then reduce the heat to low.

Cover the skillet and simmer for 10 minutes or until heated through.

 

Makes 10 servings

 

Want to add a little turkey to your buffet without all the fuss of cooking a full turkey?  These bites should fit the bill.  If you are looking for something a little less spicy the hot sauce, chili powder and cayenne pepper may be omitted.
