Cool Cottage Cheese Salad

What You Need:

1 1/4 C of cottage cheese
1/2 C of celery, chopped fine
2 tbsp raisins
1 C of pears, coarsely chopped
1/2 tsp cinnamon

How to Make It:

Place the cottage cheese into a bowl.
Stir in the celery and raisins well.
Fold in the pears.
Sprinkle with the cinnamon and stir well.

Makes 4 servings

This delicious little salad is a great beginner’s salad for children to make. At first you might need to do the chopping but it won’t take long and they will be doing it all themselves.

Kids Favorite Tortilla Chips

What You Need:

12 corn tortillas
Olive oil
Salt

How to Make It:

Set the oven temperature to 350 degrees and preheat.
Mist 2 large baking sheets with olive oil.
Gently break the tortillas in half and cut each half into 3 triangles.
Spread the tortilla pieces in a single layer on the prepared baking sheets.
Lightly mist the tortillas with olive oil and sprinkle with a little salt.
Bake the chips for 10 minutes or until lightly browned.

Makes 6 servings

Almost all children love tortilla chips and these ware no exception. They are much healthier than store bought chips and the kids can whip them up in no time, which makes them even better. Eat them alone or add a favorite homemade dip or homemade salsa for the perfect snack.

Alfredo Bacon and Pasta

What You Need:

3 C of uncooked bow tie pasta
1 1/2 C of frozen baby peas
Q C of Alfredo sauce
1/2 C of real bacon pieces

How to Make It:

Fill a saucepan half full of water, place over medium high heat and bring the water to a boil.
Carefully stir the pasta into the boiling water.
Cook the pasta for 6 minutes, stirring occasionally.
Stir in the peas and bring the water back to a boil.
Cook for 4 minutes, stirring occasionally.
Drain the pasta and peas well.
Return the pasta and peas back to the saucepan and place over low heat.
Stir in the Alfredo sauce and bacon pieces.
Cook, stirring often, for 5 minutes or until completely heated through.

Makes 4 servings

Being in the kitchen can be a lot of fun for not only the children but their adult helpers as well. Be sure to teach your children kitchen safety. Remind them of hot water, sharp knives and hot cooking surfaces. Teaching them safety in the kitchen also teaches them good habits that will last a lifetime.

Flower Power Sandwich

What You Need:

1 (16.3 oz.) can of refrigerated biscuits
1 egg, lightly beaten
4 tsp sunflower seeds
1 large tomato, sliced
8 lettuce leaves
4 oz. deli ham, sliced thin
8 slices of American cheese

How to Make It:

Allow the oven to preheat to 350 degrees.
Separate the dough into 8 biscuits then separate each biscuit into 2 pieces.
Place the biscuit halves onto a cookie sheet and press it out to 3 1/2 inch circle.
Bake the biscuits for 12 minutes or until nice and brown on top.
Use kitchen scissors and make short cuts around the edges of 8 of the biscuit halves while still warm to form a sunflower.
Use a pastry brush and lightly brush the center of the 8 cut biscuits with the egg.
Sprinkle 1/2 tsp of the sunflower seeds into the middle of each of the prepared biscuits.
Turn the other half of the biscuits upside down.
Place a lettuce leaf, a slice of tomato, a slice of ham and a slice on cheese onto each of the upturned biscuit halves.
Top with the sunflower top.

Makes 8 sandwiches

If you’re teaching your daughter how to cook this is one of the easiest recipes for her to try. It’s also a lot of fun for them to create a flower sandwich all by themselves. If they prefer they can use of their favorite deli meats instead of the ham.

Pepperoni Pizza Pizzazz

What You Need:

1 (12 oz.) can refrigerated flaky biscuits
1 C of pizza sauce
80 pepperoni slices
1 C of mozzarella cheese, shredded

How to Make It:

Spray a cookie sheet with a non stick cooking spray and preheat the oven to 400 degrees.
Separate the biscuits into 10 individual biscuits and then separate each biscuit into 4 pieces.
Place the biscuits on the prepared cookie sheet.
Spread 1 tsp of pizza sauce over each of the biscuits
Add 2 slices of pepperoni and 2 tsp of cheese to each biscuit.
Bake 8 minutes or until the cheese has melted and tops are golden brown.

Makes 40 mini pizzas

These are a great snack for kids to make if they are having company over. They also work great as a party snack. Let the kids make them with all their favorite toppings or just with cheese if they prefer.

Cooking Time: approximately 8 minutes
Total Time: approximately 28 minutes

Strawberry Cookie Cake

What You Need:

1 (18 oz.) pkg. refrigerated sugar cookie dough
2 tbsp of sugar
1 qt. of fresh strawberries, washed, stems removed and sliced
1 (3.4 oz.) box of instant vanilla pudding and pie filling
1 C of cold milk
1 1/2 C of frozen whipped topping, thawed

How to Make It:

Allow the oven to preheat to 350 degrees.
Turn two nine inch round cake pans upside down and cover them both with foil.
Remove the foil, turn the pans over and carefully line each pan with the fitted foil.
Remove the cookie dough and cut in half.
Fit the dough pieces into the prepared cake pans and press it out with your fingers to cover the bottom of the pan all the way to the edges.
Sprinkle the sugar evenly over both pieces of dough.
Bake the dough for 20 minutes or until a light golden brown.
Place the pans on a wire rack and cool for 10 minutes.
Carefully remove the baked dough from the pans using the foil as handles.
Place them back on the wire racks and cool for 20 minutes.
Place the pudding mix into a bowl.
Add the milk and beat with an electric mixer for 2 minutes or until thickened.
Fold the whipped topping into the mixture well.
Remove the foil from 1 cookie layer and place the cookie layer on a plate.
Spread half of the pudding mixture over the cookie layer.
Top with half of the sliced strawberries.
Repeat the layers again using 1/2 of the remaining pudding mix and all the strawberries.
Top with dollops of the remaining pudding mixture.
Cover and refrigerate for at least 1 hour before serving.

Makes 8 servings

This shortcake can be a little messy to make. Be sure to teach your children about being clean in the kitchen. It’s important they learn food handling, washing their hands and keeping a clean working space. Let them fancy up their cake by adding a few whole strawberries as garnish.

Italian Au Jus Dippers

What You Need:

1 (18.5 oz.) can of French onion soup
1/2 tsp dried Italian seasoning
3/4 lb. roast beef, sliced thin
6 (3 to 4 in) French rolls
6 slices of provolone cheese

How to Make It:

Pour the soup into a saucepan and stir in the Italian seasoning.
Place the soup over medium heat and bring to a boil
Add the roast beef slices and stirring occasionally cook for 5 minutes or until heated through.
Cut the French rolls in half lengthwise.
Cut the slices of cheese into 2 pieces each.
Place a slice of cheese onto the bottom of each cut roll.
Add slices of the roast beef over the cheese and add the second slice of cheese.
Top with the remaining French roll halves.
Pour the soup into small bowls and use as a dip for the sandwiches.

Makes 6 servings

Children love to be the center of attention as well as impressing their friends and family. These sandwiches are a great for serving when the kids want to impress their friends with the culinary creativeness. Teach them how to pronounce au jus and let them know it’s the French way of saying “with juice”. Their friends will be really impressed with how smart they are.

Mixed Salad Shaker

What You Need:

1 C of torn salad greens
2 tbsp carrot, grated
1/4 C of cooked chicken, cubed
2 tbsp cheddar cheese, shredded

How to Make It:

Place the salad greens into a bowl with a tight fitting lid.
Spread the carrot over the top of the greens.
Add the chicken and sprinkle with the cheddar cheese.
Cover the bowl and shake until all the ingredients are mixed together well.
Top with your favorite dressing before eating.

Makes 1 salad

Kids love to be silly and this salad gives them a chance to show their silly side. Let them go crazy shaking the bowl to mix their salad together. They can add any of their favorite salad ingredients like tomatoes or chopped hard boiled egg.

A Peach of a Yogurt Cup

What You Need:

1 C of peaches, cut into bite size pieces
8 tbsp all fruit peach spread
2 C of vanilla yogurt

How to Make It:

Place 1/4 cup of peaches into the bottom of 4 dessert glasses.
Place 2 tbsp of peach spread into each glass.
Top each glass with 1/4 C of yogurt.

Makes 4 servings

When it comes to cooking kids love to make breakfast. This is a quick and easy breakfast idea they can put together to surprise Mom and Dad on a Saturday morning. They can use any type of fruit and fruit spread the family enjoys.

Deep Red Canned Beets

What You Need:

 

21 lbs. of beets, tops removed

Canning salt

 

How to Make It:

 

Prepare the jars and two piece caps according the manufacturers directions

Keep the jars and lids hot while preparing and canning the beets.

Scrub the beets clean and place them in a 12 qt pot.

Cover the beets with water and place the pot over medium high heat.

Bring the water to a brisk boil and continue boiling for 20 minutes.

Remove the beets from the cooking liquid, reserving the liquid, and allow them to cool enough to handle.

Once cool remove the skins and trim off the roots and stems.

Larger beets should be cut in half to fit into the jar well.

Place the beets into the canning jars and enough cooking liquid to retain a 1 in. headspace.

Add 1/2 tsp of canning salt to each jar.

Release the air bubbles and add more beets and liquid if necessary to preserve the recommended headspace.

Process the jars in a pressure canner at 10 lbs. of pressure for 30 minutes.

Drop the pressure to 0 and let the jars stand in the uncovered canner for 10 minutes.

Carefully remove the jars to a draft free area to cool completely.

Check the seals and refrigerate any jars that did not seal correctly and use with two weeks.

Before eating or tasting your beets boil them for 15 minutes.

 

Makes 14 pints

 

When picking the beets you are going to can be sure to choose ones that have a dark red color and are 1 to inches in diameter. To retain the red color add 1 tsp of vinegar with 5% acidity to each jar before sealing and processing.
